STEP 1: MASH

First, scoop out the flesh from the inside of the ripe avocado with a spoon into a medium bowl, with a fork mash the avocados, squeeze lime juice, and sea salt

STEP 2: STIR

Next, gently stir in the fresh tomatoes, onion, garlic, and cilantro;  Then mix in black pepper.

STEP 3: REFRIGERATE

Finally, refrigerate for 1 hour before serving for best results. Serve over your favorite Mexican food or with tortilla chips.

Simple guacamole can last three to five days in the refrigerator. So you can make it a day or two in advance.

Store in the refrigerator. Pour a layer of water or lime juice over the guacamole. Cover the dish with plastic, pushing the wrap directly on top of the dip. Also, use an airtight container.

* First, check the color. The darker the avocado the riper it is.
 * Next, look at the color underneath where the stem was attached. If the indention is yellow, it’s not ripe. In comparison, green means it’s ready to enjoy.  If it is very dark or black, that means the fruit is not at its best.
* Most importantly, gently press the outside of the avocado if it gives pressure it is good.
* Lastly, if the avocado is hard, place it in a paper bag for three to five days. Always make sure to check them every few days for ripeness.

HOW TO KEEP AVOCADO FROM GETTING BROWN?

First, use a container that is fairly equal in size to the amount of fresh authentic guacamole that you have prepared so that there is not a lot of extra space.

Next, just place a small amount of water or milk on the top layer of the guacamole so that there is a small layer covering the surface.

Finally, place plastic wrap on top firmly so it is exactly on top of the water, or use an air-tight container. This will lock out the air and keep it from turning.
