Did you get a chance to watch yours truly on WNEP’s Home & Backyard this morning? I had the amazing opportunity to, once again, join Jackie, Paul and Mike, for the Memorial Day episode of Home & Backyard!
The setting was the beautiful shoreline of Gouldsboro State Park. In case you missed it, I prepared Garlic Lime Chicken with Pineapple-Jalapeno Salsa. This is one of my favorite summer recipes! The marinade makes the chicken super flavorful and juicy. And, the salsa! I could just eat the stuff right out of the bowl! It’s that yummy!

Now, I may look like I’m all focused on what I’m doing, but in reality, I’m completely focused on the fact that there were snakes all around me! There is only one thing in this world that I have a super-phobia of…snakes. Just typing the word give me the creeps. And, on this particular day, there were two snakes (off to my right) mating. Gross. And, several more swimming around by the shoreline.
What the camera didn’t show (thank god!) was the fact that my toes were completely curled up and I was completely freaked out! But, how does the saying go? Keep calm and cook?!?! So that’s just what I did.
