My Mom’s 3 Bean Salad

Tonight, we had dinner at my grandparent’s house.  God love them….they’re 92 and still entertaining!  My grandmother made my favorite stuffed pork chops (with the stuffing on top so it gets all crispy and yummy!) and my mother brought a 3 bean salad.  It’s a new recipe that she tried.

The Recipe

1 can sliced green beans
1 can sliced yellow/wax beans
1 can light red kidney beans
1/2 cup apple cider vinegar
1/2 cup vegetable oil
1/2 cup sugar
1 medium onion, chopped
2 tsp Italian seasoning

Drain beans and put in a medium bowl.  Add all other ingredients.  Stir well and marinate overnight in the fridge.  Serve cold.

This salad was delicious!  So sweet and tangy!  I wasn’t sure if I would like it…there’s just something that never seemed appealing to me about 3 bean salads, but this one was fantastic!  I confess.  I’m cheating with this post.  I didn’t actually make the 3 bean salad, but I was a taste tester — and that’s what counts right?!  Thanks for sharing Mom!!!
