STEP 1: Prep
Preheat the oven to 400 degrees. Add the chicken breast, wing sauce, cream cheese, shredded cheese, and blue cheese dressing in a bowl. Mix using a fork; set aside.
STEP 2: Pie Crust for the Empanada Dough Recipe
Unroll 1 pastry crust onto a lightly floured surface and roll into a 15-inch circle. Using a 3-inch round cookie cutter, cut out circles. Re-roll dough scraps as needed.
Repeat with the second pie crust until you have 12-15 circles total.
STEP 3: Juicy Shredded Chicken Empanada Filling
Add chicken filling in the center of an empanada, be careful not to over fill. Lightly brush the edges of each round with water.
STEP 4: Fold and Press the Edges Together
Fold the dough over the filling into a half-moon shape. Use the tines of a fork to crimp the edges together to seal the empanadas. Repeat with the remaining rounds and chicken mixture.
STEP 5: Brush the Egg Wash & Bake
Beat the egg with 1 tablespoon of water to make an egg wash. Brush the tops with egg wash. Place the empanadas in a single layer on a rimmed baking sheet and bake for 15 minutes.

Buffalo Chicken Empandas
Ingredients
- 1 pound Chicken, cooked and shredded
- 1 ½ cups Hot wing sauce
- 8 ounces Cream cheese
- 1 cup Mexican cheese blend
- 1 cup Blue Cheese dressing, get my recipe here
- 15 ounce Pie crusts, 1 package
- 1 Egg
- 1 tablespoon Water
Instructions
- Preheat oven to 400 degrees.
- Mix together the chicken, wing sauce, cream cheese, mexican cheese and blue cheese dressing in a bowl; set aside.
- Unroll 1 piecrust onto a lightly floured surface and roll into a 15-inch circle.
- Using a 3 inch round cookie cutter, cut out rounds.
- You can re-roll dough scraps as needed.
- Unroll second pie crust and repeat until you have 12-15 circles total.
- Place 1 heaping tablespoon of chicken mixture in the center of each round. Be careful not to over fill.

- Press the edges with a fork to seal.
