This Tropical Chicken Salad is a delicious twist on a classic recipe!
Even when it is cold out sometimes I want to eat something that reminds me of when it was warm. And chicken salad sandwiches are a great way to use up leftover chicken, or dare I say turkey. I’m sure there is none of that lying around. Right? You can always make Chicken Buffalo Pizza, Pesto Chicken Alfredo, or Peanut Chicken Rice Bowls a good old sandwich is a nice change of pace. So sandwiches it is! No bread, no problem try these Chicken Lettuce Wraps.
The cherry and mandarins in this chicken salad are a refreshing surprise and the macadamia nuts are a nice change of pace from the usual chicken salad additions. I like to use a mixture of Greek yogurt and mayo to get a lighter, and healthier version, of chicken salad. And we all know that something lighter and healthier during the holidays is good for the body.

Tropical Chicken Salad Sandwiches
Ingredients
- Rolls, I recommend Hawaiian Sweet Rolls
- 1 lb shredded chicken or turkey
- 1 cup chopped macadamia nuts
- 1/2 cup dried cherries
- 1/2 cup dried mandarins, sliced (I found these at Trader Joe's)
- cup About 3/4 Greek yogurt
- cup About 1/4 mayo, I prefer mayo with olive oil
- 2 Tbsp soy sauce
- Salt to taste
Instructions
- Combine chicken, yogurt, mayo, and soy sauce together and mix well. Adjust salt to taste.
- Fold in nuts, cherries, and mandarins.
- Serve on split rolls.
