Use up leftover chicken (or turkey) and make Tropical Chicken Salad. Toss in some tropical fruits and macadamia nuts for a twist on the usual chicken salad sandwiches.

This Tropical Chicken Salad is a delicious twist on a classic recipe!

Tropical Chicken Salad - A quick and easy recipe that is a great way to use up holiday leftovers

Even when it is cold out sometimes I want to eat something that reminds me of when it was warm.  And chicken salad sandwiches are a great way to use up leftover chicken, or dare I say turkey.  I’m sure there is none of that lying around.  Right?  You can always make Chicken Buffalo Pizza, Pesto Chicken Alfredo, or Peanut Chicken Rice Bowls a good old sandwich is a nice change of pace.  So sandwiches it is!

Tropical Chicken Salad - A quick and easy recipe that is a great way to use up holiday leftovers

The cherry and mandarins in this chicken salad are a refreshing surprise and the macadamia nuts are a nice change of pace from the usual chicken salad additions. I like to use a mixture of Greek yogurt and mayo to get a lighter, and healthier version, of chicken salad.  And we all know that something lighter and healthier during the holidays is good for the body.

Are you a holiday leftover lover or hater?  How do you use your leftovers?
