These easy Gingersnap Eggnog Ice Cream Sandwiches are a frozen treat recipe that is perfect for Christmas.
Hi It Is A Keeper readers! It’s Jade from Jonesin’ For Taste! It’s great to be back with you again this month. Now I realize this may seem just a little basic but considering how complicated the holiday meals can get I think we all need a reminder of simple dessert recipes. Every year I see eggnog ice cream and every year I’ve been wanting to do this and then I forget. Curse the holiday rush!
Eggnog holds a very dear place in my heart for the holidays. I remember the first Christmas we lived in Georgia I was pregnant with our second child and I was dying for some eggnog. The last two weeks before Christmas I checked every single store I went to. Every single store was out of eggnog when I was there. I was so devastated!
I needed eggnog to make it feel like Christmas! This was the first Christmas that we wouldn’t be with family and I was feeling rather emotional about the holidays, darn pregnancy hormones.
We went to a Christmas party at a friend’s house and my husband mentioned to the husband my anxiety over the eggnog debacle. That sweet man went to their fridge and pulled out one of their half gallons and gave it to my husband. I cried and cried and cried. I’m sure our friends never realized how much it meant to me but it saved my Christmas that year!
I did learn a couple tricks while making these.
If you let the ice cream sit for too long before scooping, the ice cream is too soft and it won’t scoop well and the cookies smash it and all the ice cream melts out. That’s bad!
If you let the made ice cream sandwiches sit for too long outside the freezer they become an even bigger mess. Also, not good!
I found when I made them up and put them in the freezer very quickly or made them up as we served them that was how they turned out the best.
With oven space at a premium every holiday dinner I think we all could use a few no-bake recipes up our sleeves to treat the masses.
My two favorite pies are still the classic Chocolate Cream Pie, Coconut Cream Pie, and Cherry Cream Cheese Pie! All are either no bake or minimal bake depending on what kind of crust you want to do with it.
And with these you can make the pies ahead of time and still save your sanity for the holidays!

Gingersnap and Eggnog Ice Cream Sandwiches
- Gingersnap cookies - homemade or store bought
- Eggnog ice cream
- Allow ice cream to warm up a bit if too hard to scoop straight out of the freezer. Allow to sit for no more than 5 minutes.
- Using a small cookie scoop, scoop eggnog ice cream and place on one cookie. Top with another cookie. Do not allow to melt! Immediately place in freezer or make them up as they are being served.
- Freeze in an airtight container in the freezer for no more than a month. If serving from freezer allow to sit for a minute to soften slightly.
- Want to scale a recipe up or down? Simply type in a new serving amount and the recipe will automatically adjust!
- When a recipe call for House Seasoning Blend, you can use this recipe or substitute salt and pepper to taste.
- I always use unsalted butter in my recipes.
- I always use a meat thermometor to test for doneness when cooking meat. This one is my favorite.
