How to Make Shrimp Scampi without Wine

These are the basic steps for making creamy shrimp scampi. Please refer to the recipe card below for more detailed instructions for this easy meal.

STEP 1: IN A LARGE SKILLET

Begin by melting the butter and olive oil then saute shallots, garlic and red pepper flakes. Meanwhile, season shrimp with salt and pepper.

STEP 2: COOK SHRIMP

Once shallots are translucent, add seasoned shrimp to the pan and cook until they turn pink, about 3 minutes. Next, remove the shrimp from the pan, place on a plate and cover with foil.

STEP 3: MAKE SAUCE

Next, add the broth or stock and lemon juice to the skillet and bring to a boil and then add the remaining 2 tablespoons butter and 2 tablespoons oil and whisk until butter until smooth. Return shrimp to the pan and toss to coat with the flavorful sauce.

Finally, add linguine and parsley to the pan and toss until everything is completely coated. Lastly, taste for seasoning and add additional salt and pepper as needed.

  • 4 tablespoons Butter, divided
  • 4 tablespoons Extra virgin olive oil, divided
  • 4 cloves Garlic, minced
  • 1 Shallot, minced

  • ¾ teaspoon Salt

Instructions

  • Melt 2 tablespoons butter and 2 tablespoons olive oil in a large skillet over medium-high heat.

    This scampi comes out so FRESH! I love that it doesn’t have wine in it as I don’t always have some on hand and the flavor doesn’t need it, it’s delicious!
