No one wants to use a hot oven in this summer heat. Here’s 15 easy no cook dinner recipes to avoid the stove all summer long.

While this summer was pretty rainy, we had a few stretches of hot, humid days.  After spending all day outside in the sweltering sun, the last thing I want to think about is turning my stove or oven on to cook dinner.  I just couldn’t fathom standing over a hot stove or heating up the kitchen with the oven.

In addition to adding excess heat to my already steamy kitchen, stoves and ovens use more energy.  As a Project Envolve Ambassador, I’m always looking for new ways to save on energy.  These Top 10 Ways to Beat the Summer Heat are a great starting point.  Plus, I incorporated some of these new energy efficient products into our home.

I also save on energy during the summer months by changing up the way I cook.  Instead of using my oven and stove, I tend to use other options such as grilling or my slow cooker (which uses less energy than the oven).

Another dinner alternative is to find easy no cook dinner recipes.  Recipes that don’t require you to turn on your oven or stove.  I love no cooking recipes, because I can make them ahead of time (usually in the morning before the day gets too hot) and stash them in the fridge until we’re ready to eat.

These no cooking recipes are a great option because I can also keep them in the cooler while we spend the day in our pool.  We can easily enjoy a quick and delicious dinner poolside.

One of my go-to no cook dinner recipes are these Lemon Pepper Tuna Lettuce Wraps.  They are easy to make and easy to transport.

I also love making a big batch of this hearty Italian Hoagie Dip.  It’s great to nibble on when you don’t feel like eating a big, heavy meal.

One of my favorite no cooking tricks is to pick up a prepared rotisserie chicken from the grocery store.  I use the chicken in BBQ Chicken Tacos and Chipotle Chicken Salad.
