I have a confession to make. I have a love affair with anything lemon. Cakes, pies, drinks, you name it. I came across this recipe for Lemon Pull Apart Bread on Pinterest. Of course, I knew I had to try it.
The recipe has only 5 ingredients and only a few simple steps. It also uses frozen bread dough which is perfect for me since I’m not much of a bread baker. Frankly, yeast kind of scares me.
I made this recipe over the weekend and it was delicious! It was a nice light dessert and it was even great for breakfast the next morning. I loved the bright, tart flavor. I think this will be perfect for Easter or Mother’s Day brunch!
Lemon Pull Apart Bread

Rolls:
12 Rhodes dinner rolls, thawed but still cold
3 Tbsp butter, melted
1 lemon, zested
1/2 cup sugar
Glaze:
1/2 cup powdered sugar
1 Tbsp lemon juice
Cut rolls in half and place in a greased 9×13 pan. Drizzle with the melted butter. Mix lemon zest and sugar together in a small bowl. Sprinkle half of the lemon sugar mixture over the rolls. Cover and let raise until doubled. Sprinkle remaining sugar mixture on top. Bake at 350 for 20-25 minutes. Remove from pan. Combine glaze ingredients. Drizzle over rolls while still warm.

I am a big lemon fan, too, but I think I’m the only one who likes it in the house. And that means, if I make this, I get to eat the whole thing myself. HA.
