I have a confession to make. I have never deep fried anything. Nothing. Ever. Frankly, I think the whole idea of a big pan of hot grease scares me.

Don’t get me wrong. That doesn’t mean my family doesn’t love french fries or fried chicken. It just means that I have to come up with other ways to give them what they want. I’m a big fan of “oven-frying”. It’s not really frying. It’s more like trying to simulate the fried flavor and texture in the oven.

I think oven-frying is a great alternative and this recipe for Oven Fries is one of my favorites. They are the perfect side dish for Crunchy Onion Bourbon Burgers, Burgers with Caramelized Onions or any kind of sandwich. The Horseradish Cream makes a great dipping sauce, too.

And, I love that I don’t make a mess of my kitchen when I make them. All you need is a good vegetable peeler and a sheet pan. That’s it. Easy as pie.

Oven Fries
4 large baking potatoes, peeled and cut into fries
1 Tbsp extra virgin olive oil
4 tsp minced chives
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper

Horseradish Cream
1/4 cup mayonnaise
1 Tbsp drained horseradish
2 tsp ketchup
1/4 tsp cajun seasoning

In a bowl combine oil and chives, salt, pepper and garlic powder. Add fries and toss to coat. Spread in a single layer on a baking sheet and bake at 425 degrees for 20-25 minutes or until potatoes are tender and golden brown.

While the fries are baking, combine all of the ingredients for the Horseradish cream in a small bowl. Stir to combine.

Serve fries hot with Horseradish Cream on the side.

That sounds really yummy. The horseradish cream sounds good perhaps in a tuna fish sandwich too.

Those sound great! What drew me in was the horseradish cream – my husband loves horseradish so I will definitely have to try these for him!

Sounds awesome. I’m not a big fan of fried foods, either. I always end up feeling sick to my stomach after I eat fried stuff and it’s really not worth the after effects. Plus, it’s wicked unhealthy!
