Bacon Avocado Grilled Cheese with Garlic Aioli

Yesterday, I shared my recipe for Avocado Chicken Salad.  Today, I have another, equally as scrumptious, sandwich where avocados are the star!  This Bacon Avocado Grilled Cheese with Garlic Aioli has so many layers of flavors and textures, it’s like a party in your mouth!

First of, don’t let the word “aioli” scare you away.  It’s really just a fancy, schmancy way of saying “mayo”.  In this case the mayo, or aioli, is jacked up with garlic, lime, salt and pepper.  That’s it.  Nothing scary.  Just lots of great flavor and a fancy name.

There is just something about buttery avocados that I can’t get enough of.  I had some left over from my chicken salad yesterday, so I rummaged through my fridge and came up with this winner!  There’s avocado (of course), bacon, provolone, spinach and nice coating of garlic aioli.  I think I’m in heaven.

Again, I’m going to sing the praises of the Good Cook Avocado tool! It gave me perfect avocado slices just by scraping the tool along the shell of the avocado. Even though avocados look intimidating, they are really easy with this tool!

Bacon & Avocado Grilled Cheese with Garlic Aioli

3/4 cup mayonnaise
2 cloves of garlic, minced
2 1/2 Tbsp lime juice
3/4 tsp salt
1/2 tsp pepper
3 slices of bacon, cooked
1/2  an avocado, cut into slices
2-4 slices of provolone cheese
5-6 Baby spinach leaves
2 slices of bread
Butter for bread

Combine first five ingredients together in a small bowl to make the garlic aioli.  Stir until combined.  Set aside.  Coat the outside of each slice of bread with butter.  Spread the garlic aioli on the other side of the bread slices.  Place one slice of bread, butter side down, on a hot grill pan.  Top bread with half of the cheese slices, bacon, spinach, avocado and remaining cheese.  Top with other slice of bread, butter side up.

Grill until each side is golden brown and cheese is melted.
