Bacon Avocado Grilled Cheese with Garlic Aioli

Yesterday, I shared my recipe for Avocado Chicken Salad.  Today, I have another, equally as scrumptious, sandwich where avocados are the star!  This Bacon Avocado Grilled Cheese with Garlic Aioli has so many layers of flavors and textures, it’s like a party in your mouth!

First of, don’t let the word “aioli” scare you away.  It’s really just a fancy, schmancy way of saying “mayo”.  In this case the mayo, or aioli, is jacked up with garlic, lime, salt and pepper.  That’s it.  Nothing scary.  Just lots of great flavor and a fancy name.

There is just something about buttery avocados that I can’t get enough of.  I had some left over from my chicken salad yesterday, so I rummaged through my fridge and came up with this winner!  There’s avocado (of course), bacon, provolone, spinach and nice coating of garlic aioli.  I think I’m in heaven.

Again, I’m going to sing the praises of the Good Cook Avocado tool! It gave me perfect avocado slices just by scraping the tool along the shell of the avocado. Even though avocados look intimidating, they are really easy with this tool! I love making simple garlic aioli for everything. Here is a great recipe Garlic Aioli.
