Recommendations for Storing the Chocolate Chip Granola Bar

Ideally, you can store your chocolate chip granola bars for up to a week in an air tight container on the counter. After that, they tend to taste a little stale.

Alternatively, you can store them in the freezer for up to three months in an air tight container and let them thaw on the counter overnight before serving.

  • 2 tsp vanilla extract
  • ½ cup mini chocolate chips

Instructions

  • Mix together your rice cereal, oats, and flaxseed in a large bowl. Set aside.
  • On medium high heat in a medium size saucepan, melt together honey and coconut oil. Continue to stir occasionally and leave on until it starts to boil.
  • Remove from heat and add in your almond butter and vanilla extract until the almond butter is completely melted into the mixture.
  • Combine the ingredients in saucepan with your dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes
  • Place your granola bars over parchment paper in a baking pan, or a cookie sheet. Evenly distribute.
  • While your granola mixture is still warm, sprinkle your chocolate chips evenly over the mixture. With another sheet of parchment paper, place on top of your granola and chocolate chips. Press down well using your hands, or another heavy item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.
  • Cut into 32 pieces.

What a perfect marriage of textures. I would never have thought of the rice cereal, but it’s such a great idea. I make lots of granola and now, I’ll be adding rice cereal to all the recipes. Thanks so much for sharing your recipe!
