We are gearing up for blueberry season here in Pennsylvania. My family has about 50 cultivated blueberry bushes so we always have an over abundance of berries each year.

We’ve incorporated them into everything – muffins, pancakes, pies, sauces and even wine! My dad made the best blueberry wine.

Recently, Fleischmann’s came out with a new Simply Homemade Cornbread Mix. It seemed like the perfect thing to add some blueberries to.

Boy, was I right! The Simply Homemade Cornbread had just the right amount of sweetness while the texture is the perfect combination of fluffy and “grit.” And, the blueberry took it over the top – they were like little pops of freshness in every bite.

It was so easy to get made-from-scratch quality without the work. I simply had to add some milk, melted butter and an egg. It came together in no time. It really doesn’t get an easier than that!

This cornbread mix is definitely a keeper in my book! If you’d like to give it a try you can find it at Walmart for $1.78. Delicious and affordable. That’s my kind of baking mix!

Easy Blueberry Cornbread

Ingredients

1 package Fleischmann’s Simply Homemade Cornbread Mix
1 cup blueberries

Instructions

  • Preheat oven to 375 degrees.
  • Prepare cornbread mix according to package directions.
  • Carefully fold in blueberries to cornbread batter.
  • Pour batter into prepared baking dish.
  • Bake for 25-30 minutes or until a cake tester inserted into the center comes out clean.
