This Mexican Breakfast Casserole is such a versatile recipe. It’s the perfect make ahead breakfast for busy mornings. It’s great for brunch served with this gorgeous Fruit Salad recipe or have it for dinner – my family loves breakfast for dinner!

  • Hash Browns: You will need 1-20oz bag of frozen hash browns, you could also use dehydrated or homemade.
  • Eggs: For this Mexican egg dish, you will need 12 large eggs or you alternatively use 1 1/4 cups of eggs whites.
  • Onion: A white or yellow onion will do for this recipe.
  • Green Chiles: You will need one can of green chiles.
  • Bell Pepper: For this recipe, it lists a red bell pepper but you can use whatever color pepper you have or prefer.

How to Make This Easy Mexican Casserole

These are the basic steps for making for this Mexican Breakfast Casserole. Please refer to the recipe card below for more detailed instructions.

STEP 1: PREP THE BAKING DISH

First, preheat the oven to 350 F degrees and spray your baking dish with cooking oil. And dice up the onion and pepper.

STEP 2: MAKING THE EGG MIXTURE

In a mixing bowl, store together eggs, milk, cumin, chili powder,house season blend, (or salt and black pepper) then add in the can of green chiles.

STEP 3: LAYERING THE CASSEROLE

Start by adding the hash browns to a baking dish, then spoon over the diced peppers and onions, and then pouring over the egg mixture. Lastly top with the shredded cheese layer.

STEP 4: BAKING THE CASSEROLE

Bake in the oven at 350 degrees for 45-55 minutes. You can check the doneness of the casserole by sticking in a knife. Finally, top with sliced avocado, cilantro, and salsa!

HOW TO MAKE THIS RECIPE AHEAD OF TIME

Bake the night of time for about 35 minutes and allow to cool fully be putting in the fridge, then cook for another 15 minutes before serving!

Store any leftovers you may have in the fridge in an air tight container, eat within 3-4 days.

HOW TO FREEZE THIS RECIPE

To freeze this casserole, cook and then allow to cool fully before wrapping in foil and freezing. Baking and freezing in aluminum pan would be the easiest option.

HOW TO REHEAT THIS RECIPE

If reheating from the fridge, microwave for 1-2 minutes or until hot. For reheating, out of the freeze, cook in a covered baking dish for about 15 minutes or until hot. Melt cheese under the broiler if adding more.

Ingredients

  • 20 ounce hash browns, frozen, thawed
  • 1 onion, small, diced
  • 1 red pepper, diced
  • 12 eggs
  • ½ cup milk
  • 4 ounces diced green chilies
  • 2 cups cheddar cheese, shredded
  • ½ tsp chili powder
  • ½ tsp cumin
  • House Season Blend, to taste

Instructions

  • Preheat oven to 350 and prepare a 9 x 13 baking dish with cooking spray.
  • Add hash browns to bottom of dish and sprinkle with house season blend.
  • Sprinkle the onion and red pepper over the potatoes. Add half the green chiles and about half of the cheese to the top.
  • In a bowl, mix the eggs, milk, chili powder, cumin and remaining green chiles.
  • Pour over the potato and vegetable mixture, then top with the rest of the cheese.
  • Bake at 350 degrees for 45-55 minutes. Check for doneness by inserting a knife in the center.
