STEP 1: Make the Cheesecake Filling
To make the cheese cake mini bites, in a mixing bowl of a stand mixer or with a hand mixer, beat the cream cheese, vanilla extract, and powdered sugar until smooth. You can also use the paddle attachment.
STEP 2: Form the Bite-Sized Balls
Now you will want to roll the mixture into about 24 one inch balls, you can use a cookie scoop to do this to ensure they are all equal. Then place onto a lined baking sheet and chill in the freeze for 30 minutes.

- 16 ounces Cream cheese, softened
- ⅔ cup Powdered sugar
- 1 teaspoon Vanilla extract
- 7 ounces Chocolate melting wafers
- ½ cup Heath Baking Bits
Instructions
- Line a baking sheet with parchment paper.
- Beat cream cheese, powdered sugar, and vanilla extract with an electric mixer, until smooth and creamy.
- Form mixture into one inch balls, and set on the baking sheet.
- Freeze for 30 minutes.
- Line another baking sheet with parchment paper.
- Add the chocolate wafers to a small bowl and melt in the microwave in 30 second increments, stirring between each heating session, until fully melted.
- Remove the cheesecake balls from the freezer, and dip them one by one into the chocolate. Then set on the clean sheet of parchment, and top with toffee.
- Refrigerate until ready to serve.

I followed the recipe but I could not get the batter thick enough to form a ball. I tried adding more powered sugar and that did not help. What did I do wrong? How could I have fixed the batter so it would form a ball?
The key is letting the batter chill up. Put in the freezer. Take out and roll some and then put the rolled balls in the freezer.
