Can I Make This Cozy Soup Recipe Vegan?

A hearty bowl of Unstuffed Pepper Soup, filled with tender meat and rice.

Absolutely! Use vegetable broth in place of beef broth or chicken broth as well as adding in more vegetables, like more diced tomatoes and tomato sauce, in place of the ground beef.

Variations and Substitutions for this Delicious Soup

  • Crockpot: Crockpot stuffed pepper soup is great to make. Brown the ground beef on the stove top with the onions. Then, add the ground beef and cook on low for 4 hours.
  • Broth: Instead of using beef bouillon you can use chicken broth in this delicious soup.

Love the recipe but I changed the bouillon granules to 2 Tablespoons Better than Bouillon Beef Base which is low sodium, organic and has no MSG. Other wise this recipe is a true keeper. Thanks so much for sharing.
