Crock Pot French Toast Casserole with Apples

cubed challah

Italian or other hearty bread

medium apples

peeled and diced, about 2 cups

pecans

half and half

light brown sugar

vanilla

pumpkin pie seasoning

Instructions
Spray 5 quart crock pot with non-stick cooking spray.
Add the bread cubes, apples and pecans to the crock pot and stir to combine.
In a large bowl, whisk together eggs, half and half, brown sugar, vanilla, pumpkin pie seasoning and salt.
Pour the egg mixture over the bread.
Cover and cook on high for 2 hours or low for 4 hours.
Notes
Add Chips:
Try adding chocolate chips to the french toast casserole.
Berries:
Top with berries or a berry compote.
Variation tip:
Drizzle warm maple syrup and butter.
Almond Extract
: Replace the pecans with slivered almonds and almond extract.
