In either a pan or pot, add the water, butter, salt, and cinnamon. While heating the mixture over medium heat, melt everything together and bring the mixture to a boil.
Turn the heat to low.
Add all the flour to the mixture and stir quickly as well as vigorously to combine the ingredients and form a dough ball. Quickly remove from the heat when the dough ball starts to form.
Let the dough ball rest for 5 minutes.
Transfer the dough into a bowl and add eggs one at a time until well-combined.
Start heating your vegetable oil in your frying pan until it reaches 350 degrees Fahrenheit.
Scoop the churro dough into a piping bag that is fitted with a large star tip.
Begin squeezing 2-3 inch long churro dough piece into the hot oil cut the dough with a kitchen shear when it reaches its desired length.
Fry the churro bites until they are fully golden brown. Remove from oil and place on paper towels to drain excess oil.
In a bowl, combine the sugar and cinnamon for the churro topping.
After each churro bite is placed in the bowl, toss it around to coat thoroughly.
