Place a cooling rack over a baking tray and set near the fryer.
Heat your frying oil in a dutch oven on medium heat and monitor the temperature with a candy thermometer to make sure it reaches the desired level of 350F.
Enlarge each biscuit by stretching it at least 1 to 2 inches wider.
Once oil has reached the desired temperature, fry each donut separately for approximately 1 minute on each side until they turn golden brown.
Place every fried donut on the cooling rack so that any extra oil can drain away.
Fill the center of each donut with approximately 2 tablespoons of jelly using either a piping bag or baking syringe. Place the filled donuts back on the cooling rack and repeat the process for all the donuts.
Sprinkle powdered sugar on top of each donut, then turn them over and repeat on the other side.
Notes
Glaze: For some extra added sweetness, make a simple glaze and drizzle over the warm donuts so it can cascade down the sides.
Cinnamon Sugar: If you're a fan of the classic cinnamon sugar donuts, you can easily replicate them. When the donuts are still warm brush melted butter over the top and dip the donut into a cinnamon sugar mix.
Filling: While jelly is a fruity and delicious filling for these donuts, you can get creative and experiment with fillings such as nutella or peanut butter.
