Set the oven temperature to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Shape the chocolate chip cookie dough into small 1-inch balls. Coat them with funfetti sprinkles and arrange them on the baking sheet. Gently press down on each ball with your fingertips to flatten them slightly. Repeat this process until you have made a total of 12 cookies.
Put in the oven and cook for 12-14 minutes, or until the edges have a slight golden color.
Prepare the cream cheese frosting filling while the sugar cookies are in the oven. Combine cream cheese, powdered sugar, and vanilla extract in a bowl. Use a hand mixer to thoroughly blend all ingredients until well mixed.
Next, incorporate the milk and continue to mix until the cream cheese reaches a velvety consistency. If it remains slightly dense, pour in an additional teaspoon or tablespoon of milk. Transfer the frosting into a piping bag.
After the cookies are finished baking, allow them to cool completely either on the baking sheet or by transferring them to a wire rack.
Once the cookies have cooled down, turn over 6 of them to expose their bottom side.
Make a small incision in the piping bag filled with cream cheese frosting and squeeze out a generous amount of frosting onto each of the 6 cookies.
Arrange the other 6 cookies on top of the frosting, applying a light pressure to create cookie sandwiches where the frosting slightly extends beyond the edges.
Roll the cookie edges in the funfetti sprinkles.
