Instructions
Combine all of the vinaigrette ingredients in a bowl and whisk together.
Add remaining ingredients to a large bowl and stir to combine.
Pour vinaigrette over vegetables and beans and stir to combine.
Refrigerate for at least 1 hour before serving.
Notes
Add Heat:
Jalapeno peppers add lovely heat to this side dish.
Short cut tip:
Fresh Lime Juice brightens this dish.
Variation tip:
Feel free to add fresh avocado before serving.
Alternate ingredient
: Agave or Honey can be used in place of the sugar.
