Vanilla Waffles with Blackberries

  • 2 cups all purpose flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 eggs - slightly beaten
  • 1 3/4 cups almond milk
  • 1/2 cup coconut oil - melted
  • 1 Tbsp vanilla
  • 1 pint blackberries - choosing either whole or mashed


  • In a medium sized bowl, combine the flour, sugar, baking powder, and salt. Make a well in the center and set aside.
  • In another bowl, combine the eggs, almond milk, coconut oil, and vanilla, and mashed blackberries, if using. Add egg mixture all at once to flour mixture and stir just until moistened but the batter will still be lumpy.
  • Pour batter on preheated and greased waffle maker. Add 4-6 blackberries per waffle if using whole. Cook according to waffle maker's directions.
