Roasting Garlic in aluminum foil and drizzle olive oil: To roast the garlic head, cover the whole head of garlic in a piece of aluminum foil drizzle with extra virgin olive oil and salt over the top. Roast in the oven at 400 degrees F for 45 minutes to an hour. Squeeze out the garlic when cool enough to touch and use in the recipe below. Making aioli with this roasted garlic version truly enhances the flavor.
Flavoring: To add even more flavor, try adding in a pinch of salt and pepper, Dijon mustard, or Worcestershire sauce. Chive, paprika, cayenne or tarragon adds flavor or try lemon zest too. So much better than store bought it is a true gourmet taste. You will slather it on everything.
