Melt Butter in skillet with sliced apples and cook for a few minutes to soften them up. Add 1/3 cup of water, brown sugar, cinnamon, nutmeg and vanilla, stir over medium heat and combine apples with sauce.
Dissolve corn starch in the remaining 1/3 cup of water. Add into cooked apples and let boil for a few minutes until thickening occurs. Take off the heat and cook pancakes while apples continue to thicken.
Pancakes
Preheat griddle to 350 degrees and spray with cooking spray. In a bowl mix all dry ingredients with whisk. Add milk, egg, vanilla and oil. Stir to remove the lumps.
With a 1/4 cup scoop pour pancakes onto a griddle. Flip when golden brown on each side.
Assemble pancakes with apples and add whipped cream and sprinkle with cinnamon or powdered sugar.
This pancake recipe feeds 2 -3 ppl. You may want to double pancake ingredients and reserve any remaining batter for the next day.
