Cut peeled sweet potatoes into 3/4 inch sticks; Pat dry.
Toss potatoes with oil and spread out on rimmed baking sheet making sure that the potatoes aren't touching.
Bake for 20 minutes, turning potatoes half-way through baking.
Remove from oven and sprinkle all purpose seasoning blend over fries.
Notes
Fries Crispier: Dry the uncooked fries well before coating them with cornstarch and oil. Moisture will prevent the fries from getting crispy.
Parchment: Use parchment paper to line the baking sheets. This will prevent the fries from sticking and burning. Remove tray from the oven and use tongs to flip the fries.
Season the Fries: Do not salt the oven fries before baking. Sprinkle the fries salt will draw out moisture and make the fries soggy. Season with salt after baking, remove from the oven when the baked fries are hot and crisp.
Serving: Serve the fries hot and fresh. They will lose their crispiness as they cool down. You can reheat them in the oven if needed, but they may not be as crispy as the first time.
Wedges: Make sweet potato wedges in place of the fries. Make sure you spread the fries in a single layer. Fries aren't the only way to bake them try sweet potato chips.
