Instructions
Apple Cider Pancakes
Sift together flour, baking powder and white sugar into a large bowl.
Stir in brown sugar, salt and pumpkin pie spice blend.
Whisk in eggs, half and half, cider and vegetable oil; whisk until smooth.
Preheat griddle and coat with non-stick cooking spray or butter.
Pour 1/4 cup of batter onto griddle.
Cook for 3-4 minutes or until there are a lot of bubbles on top.
Cook for an additional 3 minutes.
Transfer to a plate and keep warm.
Cider Infused Maple Syrup
In a small saucepan over medium heat, combine syrup, cider, pumpkin spice blend, butter and salt.
Bring mixture to a boil then turn down to medium and simmer for 5 minutes or until thickened.
Drizzle over Apple Cider Pancakes.
