Mix together your rice cereal, oats, and flaxseed in a large bowl. Set aside.
On medium high heat in a medium size saucepan, melt together honey and coconut oil. Continue to stir occasionally and leave on until it starts to boil.
Remove from heat and add in your almond butter and vanilla extract until the almond butter is completely melted into the mixture.
Combine the ingredients in saucepan with your dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes
Place your granola bars over parchment paper in a baking pan, or a cookie sheet. Evenly distribute.
While your granola mixture is still warm, sprinkle your chocolate chips evenly over the mixture. With another sheet of parchment paper, place on top of your granola and chocolate chips. Press down well using your hands, or another heavy item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.
Cut into 32 pieces.
Notes
Recipe Can be Doubled: Simply increase the ingredients proportionately and split it into two baking dishes before baking.
Different Chips: Try with peanut butter or butterscotch chips or even a combination.
Nut Butter: There are a lot of great nut butters out there, alteratives even include sunflower butter for people with nut allergies.
Go Nuts: Try some crushed or chopped pecans or walnuts in your bars.
