Creamy Chicken Pesto Pasta

thin boneless skinless chicken breasts

chicken broth

Pesto Sauce

half and half
▢

parmesan cheese

Instructions
Heat olive oil in a large skillet over medium high heat.
Season both sides of chicken with salt and pepper and chop into one-inch strips.
Sear chicken on each side in skillet. It does not need to be cooked through at this point.
Once chicken is seared, add shallots and cook for 2-3 minutes until translucent.
Add garlic, chicken broth and 2 tablespoons of pesto.
Add addition salt and pepper to taste.
Bring to a simmer and add the pasta.
Simmer for 9-12 minutes or until pasta is al dente.
Remove from heat and stir in half and half and parmesan cheese.
Serve immediately.
Notes
Basil:
Top with fresh basil or other herbs.
Add Vegetables:
Fresh Spinach or other vegetables.
Short cut tip:
Store bought or jar versions of sauce can be perfect for this recipe.
Variation tip:
Feel free to add heavy cream to make this dish super rich.
Dietary consideration tip:
Fat free or low fat versions of cheese and cream can also be of use in this recipe.
