Beat cream cheese, powdered sugar, and vanilla extract with an electric mixer, until smooth and creamy.
Form mixture into one inch balls, and set on the baking sheet.
Freeze for 30 minutes.
Line another baking sheet with parchment paper.
Add the chocolate wafers to a small bowl and melt in the microwave in 30 second increments, stirring between each heating session, until fully melted.
Remove the cheesecake balls from the freezer, and dip them one by one into the chocolate. Then set on the clean sheet of parchment, and top with toffee.
Refrigerate until ready to serve.
Notes
This Recipe Can be Doubled: This is a great recipe for a party. Just increase the ingredients proportionately.
Don't Have Melting Chocolate: If you do to have any melting chocolate around, you can also use semi-sweet or dark chocolate chips mixed with about 1 tbsp of coconut oil. You could also use white chocolate candy coating as well.
Switch up the Candy: If you are not a fan of toffee, you can use another type of candy instead, such as crushed m&m's or chopped peanut butter cups. Or even sprinkles, graham cracker crumbs, cookies crumbs or crushed nuts.
Drizzle: Decorate with chocolate drizzle, cookie crumbs, graham cracker crust or even pecans for fun variations.
Sprinkles: Use fun sprinkles to make this treat special.
