Preheat oven to 350 degrees. Prepare a 9x5 inch loaf pan with non-stick spray or oil.
Combine the sugar, milk, oil, eggs, and vanilla in a medium bowl. Whisk until combined.
In a separate bowl, combine flour, baking powder, and salt.
Add dry ingredients to wet ingredients and stir together until just combined. You don’t want to over mix the batter.
Stir strawberries with 2 tablespoons of flour and carefully fold into batter.
Pour the batter into the prepared loaf pan and bake in preheated oven for 55 - 60 minutes or until golden brown and a toothpick inserted in center of the bread comes out clean.
Remove from oven. Place bread in pan on a cooling rack for 5 minutes.
After 5 minutes, loosen edges of bread with a knife and carefully turn out bread. Allow bread to continue cooling until completely cooled.
Notes
This Recipe Can be Doubled: This recipe can easily be doubled to increasing the ingredients proportionally and split between 2 loaf pans and bake at the same time.
Coating Strawberries in Flour: Coating your strawberries in flour before adding to batter so the strawberries don't sink to the bottom when you bake any strawberry bread recipe.
Blueberry Bread: For a flavor variation, you could sub the strawberries for blueberries in order to make blueberry bread.
Make a Glaze: To make an easy glaze to top with combine powdered sugar, vanilla, and milk. Start with just a little bit of milk and add as necessary.
Strawberry Muffins: To make strawberry muffin, line a muffin tin and fill three quarters of the way with the batter. Bake for 20-25 minutes. Or make a quick cream cheese frosting.
Add Nuts: For some added flavor and texture, you can add walnuts or pecans to the batter.
Strawberry Chocolate bread: To add some chocolaty taste, add chocolate chips to your batter.
