Spray a 9×13 Pan with cooking spray. Place Salmon into the pan.
Mix together Brown Sugar, Maple Syrup, Soy Sauce, Dijon Mustard and Pepper
Pour mixture over Salmon
Now place fresh Broccoli on one side of Salmon and cooked Rice on the other.
Cover with foil and cook in a 400 degree oven. Timing will depend on how thick your Salmon is. Thick fillets should cook for about 15-20 min. Less for thinner. Check after 10 minutes.
Add Almonds and Green Onions on top if you like.
Notes
More Marinade: Make extra glaze to use as a sauce. If you like the sauce thicker, make a cornstarch slurry and cook in a small saucepan.
Add Seeds: Top the dish with sesame seeds for a nice garnish.
Rice: Replace white rice with brown rice or cauliflower rice.
Variation tip: Use different vegetables in this salmon bowl, such as cauliflower, mushrooms, or Brussels sprouts.
Alternate ingredient: Replace the brown sugar with honey or agave syrup in the glaze.
Alternate cooking method tip: Cook the salmon in the air fryer for 6 to 11 minutes.
Cook Time: According to the FDA, salmon is considered cooked when the thickest part reaches 145 degrees F. Adjust the total time necessary to cook based on the thickness of your salmon.
