In a medium-sized bowl, whisk together the muffin mix, milk and egg until well-combined.
Allow the mixture to sit for 5 minutes before proceeding with the recipe.
Place a skillet over medium-heat and once hot, add a bit of butter or baking spray.
Once the butter is melted and hot, add 1/4 cup of the pancake batter.
Allow the pancake to cook for about 2 minutes, until bubbles appear all over the top. Flip and cook until golden brown on the bottom, approximately 2 minutes.
Remove the pancake to a plate and repeat with remaining batter.

This Recipe Can be Doubled: This is a great recipe for a larger family brunch. Simply increase the ingredients proportionately. You can cook on a griddle to make the cooking process faster as you can cook more at once.
Other Flavors: This recipe will work with any other flavor of muffin mix, banana or pumpkin cake mix pancakes would be tasty.
Funfetti Pancakes: For birthday cake batter pancakes, use funfetti cake mix or yellow cake mix and top a small amount of sprinkles, whipped cream, and a drizzle of vanilla glaze.
Toppings: Top pancakes with fresh blueberries, strawberries, raspberries, sprinkles, or cool whip.
Vanilla Icing: Make a simple icing by combine powdered sugar, a teaspoon vanilla extract, and milk.
