Chex Peanut Butter Truffles

Peanut Butter Truffles are an easy no-bake recipe for the holidays. They have a delicious creamy peanut butter filling and a chocolate shell, as well as a crispy texture from the Chex cereal.
In a large bowl mix crushed cereal, peanut butter, powdered sugar, and vanilla until well combined, using your hands.
Chill 1 hour in refrigerator.
Roll into balls, dip in melted chocolate, and return to refrigerator to set for about 30 minutes.
Roll in powdered sugar and enjoy!

Dipping in Chocolate: You can also use dark chocolate, white chocolate, or peanut butter chips. For less mess, try using a chocolate dipping tool.
Nut Butter: Try using almond butter or cashew butter in place of peanut butter.
Extra Crunch: For an extra crunch in these peanut butter chocolate truffles, use crunchy peanut butter or stir in chopped peanuts.
Melting Chocolate: If you have difficult time melting chocolate to the right consistency, you can add a bit of coconut oil to help get it super smooth and easy to work with when coating the peanut butter balls.
