Christina's Notes
Use Fresh, High-Quality Spices: The flavor of your rub will only be as good as the spices you use. Opt for fresh, aromatic spices whenever possible.
Toast Whole Spices: For an even deeper flavor, you can lightly toast whole spices in a dry skillet over medium heat until fragrant before grinding them. Let them cool completely before mixing with other ingredients.
Mix Thoroughly: When you make dry rub wings, ensure all the spices are evenly distributed in your rub for consistent flavor on every wing. Let the wings sit in the dry rub for extra flavor.
Season the Wings Evenly: Pat the chicken wings dry with paper towels before applying the rub on chicken. This helps the rub adhere better. Sprinkle the rub generously and evenly over all surfaces of the wings, then rub it in.
Don't Be Afraid to Experiment: This is your chance to play with flavors! Start with a basic recipe and adjust the ratios of spices to find your perfect blend. Keep notes on what you add so you can recreate your favorites.
Consider the Cooking Method: Adjust your rub based on how you're cooking the wings. For example, if wings are coated with more sugar it might caramelize beautifully on a grill but could burn easily in a hot oven.
Taste Test (If Possible): If you're unsure about the balance of your rub, you can taste a tiny pinch, before touching the chicken. Adjust the seasonings as needed before applying it to the crispy chicken wings.
Oven Baked Wings: Cook wings in the oven on a baking sheet. Preheat oven to 400 and use baking powder to make them crisp. Baked chicken wings are the best and are really crispy. Air Frying: The air fryer is a wonderful way to cook the best wings. Arrange the wings in a single layer in your air fryer basket (they should NOT be touching), and cook for 10 minutes at 400 F degrees, flip once during the cooking process to make golden brown and crispy.
