Creamy Chicken Pesto Pasta
This chicken pesto pasta is creamy, comforting, and made in one pot for easy weeknight magic. With just a few pantry staples, it’s a foolproof dinner the whole family will devour—and yes, even the picky eaters.
Ingredients
- 4 thin Boneless skinless chicken breasts
- 1 Tablespoon Olive oil
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 1 Shallot , chopped
- 3 cloves Garlic, minced
- 4 cups Chicken broth
- 4 Tablespoons Pesto, divided
- 1 pound Pasta
- 1 cup Half and half
- ½ cup Parmesan cheese, grated
Instructions
- Heat olive oil in a large skillet over medium high heat.
- Season both sides of chicken with salt and pepper and chop into one-inch strips.
- Sear chicken on each side in skillet. It does not need to be cooked through at this point.
- Once chicken is seared, add shallots and cook for 2-3 minutes until translucent.
- Add garlic, chicken broth and 2 tablespoons of pesto.
- Add additional salt and pepper to taste.
- Bring to a simmer and add the pasta.
- Simmer for 9-12 minutes or until pasta is al dente.
- Remove from heat and stir in half and half and parmesan cheese.
- Serve immediately.
