Sift together flour, baking soda, salt and cinnamon. Add dry ingredients to creamed shortening.
Mix in coffee and fold in apples and walnuts. Pour batter into a greased and floured tube or bundt pan.
Stir together topping ingredients and sprinkle evenly over top of cake batter.
Bake for 45-55 minutes or until a cake tester, inserted to the center, comes out clean.
Cool for 10 minutes and remove cake from pan by inverting it onto a serving plate.
Christina's Notes
Add Vanilla Extract: A teaspoon of vanilla extract makes a wonderful addition to this cake. You can also add some nutmeg, apple pie spice, or apple butter to the batter.
Finish: Sprinkle a little powdered sugar, caster sugar, or demerara sugar.
Variation tip: Toss the apple slices in a little lemon juice to keep them from getting brown.
Alternate ingredient: Finish with a drizzle of cream to finish the cake.
Replace: Pear slices can be used in place of apple.
Different Pan: Use a spring form cake pan in place of a Bundt pan tin.
Glaze: Make a great glaze with powdered sugar and cream or milk.
Double the Recipe: If you're making a big cake, double the exact recipe measurements, or cut the recipe for a smaller cake.
