Greek Chickpea Salad
Greek Chickpea Salad is a refreshing and flavorful dish that's perfect for a light lunch or a side dish to a fabulous Summer meal. This classic salad combines the creamy texture of chickpeas with the tangy flavors of feta cheese, cucumbers, tomatoes, and a zesty dressing.
Ingredients
- 15 ounces Chickpeas , 1 can, rinsed and drained
- ½ cup Mini sweet peppers , sliced
- ¼ cup Olives, green or black
- 1 cup Cucumber , sliced and then halved
- 1 cup Cherry tomatoes, halved
- ¼ cup Red onion , sliced thinly
- 7 ounces Feta cheese, 1 block
VInaigrette
- 3 tablespoons Olive oil
- 2 tablespoons Red wine vinegar
- 1 ½ teaspoons Oregano
- 1 tablespoon Chopped parsley
- 2 teaspoons Minced garlic
- ¼ teaspoon Salt and pepper, each
Instructions
- In a large mixing bowl, blend together the chickpeas, sweet peppers, olives, cucumbers, tomatoes and red onion.
- In a smaller bowl, whisk together the vinaigrette ingredients until well combined.
- Top the salad with the block of feta cheese, and pour the vinaigrette over the ingredients before serving.
Christina's Notes
- Creamier salad, add a dollop of Greek yogurt to the dressing.
- Cheese: Substitute feta with other creamy cheeses like goat cheese or ricotta salata.
- Spicier salad, Add a pinch of red pepper flakes to the dressing when you make this salad.
