Easy Thai Peanut Noodles

Ingredients

  • 2 packages of chicken flavored ramen noodles
  • 2 tablespoons peanut butter
  • 1 tablespoon Sweet Chili Sauce
  • 2 tablespoons low sodium soy sauce
  • 1/2 teaspoon fish sauce
  • 2 green onions - chopped
  • 1/4 cup peanuts - chopped

Instructions

  • Prepare ramen according to package directions.
  • Meanwhile, in a bowl, whisk together the peanut butter, sweet chili sauce, soy sauce and fish sauce.
  • When the ramen are finished cooking, reserve 1 cup of the broth and drain the remaining broth from the noodles.
  • Pour reserved broth and sliced green onions into the bowl with the peanut butter mixture and whisk until creamy.
  • Add noodles and toss to combine.
  • Top with chopped peanuts.
