In a large bowl, whisk together the melted butter, cream cheese, milk, salt, and pepper until well combined.
Add the corn, bacon, and one cup of shredded cheese. Stir to coat the corn with the cream cheese mixture.
Pour the mixture into a 9x13 baking dish and bake in the preheated oven for 20 minutes. Then, remove the casserole and top with remaining shredded cheese. Return to the oven and bake for 10 minutes, until cheese is melted.

Add Onions or Peppers: To add more flavor use green onions or mushrooms to the creamy sauce of this baked corn casserole.
Short cut tip: Cook in the crock pot to free up your oven space. The slow cooker does not change the texture or creaminess of the casserole.
Variation tip: Top with more crispy bacon.
Alternate ingredient: Canned corn or fresh corn kernels or corn in the can also work in this recipe. Add a little heat with jalapeno peppers or green chilies or top with sour cream to this cheesy corn casserole.
