Mix together brownie mix, eggs, olive oil, and flour. Take about one tablespoon full of dough and roll in your hand into a ball. Roll in powdered sugar coating it well. Pressing some extra sugar into the top of the brownie cookie.
Place on a baking sheet lined with parchment paper. About 2 inches apart works as they cookies will expand as they cook. Bake for 11 minutes then remove with a cookie spatula to a cooling rack. Store in airtight container.
Notes
Add Nuts: Pecans, walnuts or even almonds add a satisfying crunch.
Chips: Stir in semi-sweet chocolate chips, white chocolate, dark chocolate, or try some melted chocolate makes everything better or even caramel chips.
Variation tip: Top with candy such as chocolate coated candies or chopped up candy pieces.
Alternate ingredient: Sprinkles. Especially seasonal colors and shapes will enhance this recipe or sprinkle with a little flaky sea salt. Try adding a little pure vanilla extract to the cookie dough balls for a richer flavor.
