Combine the fiesta corn, jalapeno, and shredded cheese in the bowl of a slow cooker. Stir to mix.
Place the cream cheese on top of the corn mixture.
Place the lid on the slow cooker and set to cook on low for 2 hours. Halfway through the cook time, remove the lid and stir the ingredients to mix the cream cheese into the corn mixture. Continue cooking for the remaining time.
Notes
Roast: Take it to the next level by roasting your own corn on the cob, remove it the kernels from the cob.
Serve it in Bread: Hollow out a bread bowl and place the dip in it.
Lime Juice: Feel free to add wedges of fresh lime with the dip.
Variation tip: Crumble some bacon on top to add a little meat.
Top: Top with a little green onions or fresh herbs such as parsley.
Greek Yogurt: A Greek yogurt cream cheese is a great replacement for this elote dip. Sour cream can add a nice zing too.
