Add 1 cup of water to your Instant Pot. Place your trivet inside. Add your egg mold inside. You can add two molds – one on top of another.
Put your lid on the Instant Pot. Close the sealing valve.
Set your IP to “High Pressure” for 12 minutes.
Once complete, do a manual release.
Remove your egg molds (with a hot pad or towel as it will be hot), and transfer to a cooling rack.
Once your bites have cooled, flip your molds upside down, and push on each mold in order to pop out the molds.
Top with more cheese, bacon, green onions, and/or salsa! Enjoy!
Notes
Doubled: Great for a crowd. Wonderful addition for brunch.
Different Proteins: Ham, Canadian bacon, sausage or even corned beef.
Short cut tip: Get pre diced ham, bacon bits or precut vegetables.
Alternate ingredient: Feel free to add some more spice, try my house seasoning blend or a dash of hot sauce or spices if you prefer.
Dietary consideration tip: For a healthier version, try making with Eggbeaters or egg whites. Alternatively, make a vegetarian version by using your favorite meat alternative or going all veggie.
Cheese: Put your favorite cheese into the egg bites and more on top. Gruyere, cheddar or any blend that you love.
