Turn your Instant Pot to Sauté mode. Once hot, add your sausage, oil, onion, bell pepper, and mushrooms. Stir and cook until cooked; about 3-5 minutes.
Add in your remaining ingredients except for the spinach to your Instant Pot.
Close the lid. Close the valve and set your IP to High Pressure for 10 minutes.
Once the 10 minutes is complete, do a quick release.
Remove the lid and add in your spinach. Stir.

Can be Doubled: Simply increase the ingredients proportionately and freeze a meal for later.
Add Cheese: Of course, a sprinkle of Parmesan or Asiago on top makes this soup even better.
