In a mixing bowl, combine flour, baking powder and salt.
Add diced butter to flour mixture and with your hands. Massage the butter into the flour.
Using a dough hook, knead the dough on medium speed slowly adding the buttermilk until dough ball forms.
Lightly dust a flat surface with flour and flatten dough to 1 1/2 inch thick.
Using a wide mouth mason jar, or another punch out the biscuits. Re-knead and flatten excess dough for more biscuits.
Place biscuits in air fryer basket, brush tops with melted butter and cook at 370 for 5 minutes on each side.
Notes
Add Cheese:
A great Parmesan or Cheddar are fabulous in these biscuits.
Handling:
The less you handle or work the dough the better the result.
Variation tip:
Feel free to add fresh or dried herbs to the biscuits. for example: garlic, chives, rosemary.
Cold is Best:
Freeze the butter after dicing while you do the rest of the recipe. it provides great lift and flavor.
Sharp Edges:
Most bakers say that a sharp cutter allows for a better rise as you do not squish the sides.
Close:
Biscuit should touch while baking. this allows the tops to get golden but the middles to stay soft and fluffy.
