Instructions
In a large bowl combine tomatoes, cucumbers, onion, chick peas, roasted red peppers, olives, cheese, mint and basil; Toss to combine.
Add all dressing ingredients to a jar with a tight fitting lid.
Shake to combine.
Pour dressing over salad and toss to combine.
Serve immediately.
Notes
Add Croutons:
Toast some of your favorite bread and add the croutons to your salad.
Nuts:
Top the salad with toasted pine nuts for a crunchy texture.
Tofu:
Use tofu instead of feta to make this salad vegan.
Capers:
Capers add a great salty bite to this dish.
