Place white sugar and cinnamon in a gallon-sized zip top bag. Shake to combine and set aside.
Measure Chex cereal into a large mixing bowl. Set aside.
Place white chocolate chips in a small microwave-safe bowl and melt for 25 seconds. Stir and reheat as needed. (You can also add a bit of coconut oil or shortening to make the mixture more melty.)
Pour the melted white chocolate chips over the Chex cereal and stir to coat.
Scoop the Chex cereal into the bag with the cinnamon sugar mixture, then seal and shake to coat the cereal completely.
Pour the cinnamon sugar-coated cereal onto a cookie sheet and allow the white chocolate to set completely, approximately 30 minutes, before storing or serving.

This Recipe Can be Doubled: Great recipe for a crowd. Simply increase the ingredients proportionately and split it into two baking dishes.
Add Nuts: Some crushed up nuts can add a great flavor.
Cookies: Crush some butter cookies or snickerdoodles and add them to the mix.
Caramel: Melt Caramel and drizzle on top of the churro nutty buddies.
Alternate ingredient: Try cinnamon toast crunch or another cinnamon cereal to make this an even more flavorful buddy.
