Place potatoes in the microwave for 1-2 minutes to soften them. Cut 1mm slices 3/4 Of the way through potatoes. I use chop sticks as a buffer.
Spray potatoes with oil and salt and pepper them to taste. Cook on 400 for 18 minutes.
While cooking, melt the butter and mix in the cheese, garlic, and parsley.
Brush mixture onto cooked potatoes and enjoy.

This Recipe Can be Doubled: Simply increase the ingredients proportionately.
Sweet Potato: You could also swap regular potatoes for sweet potatoes following the same instructions.
Alternate cooking method tip: If you do not have an air fryer, you can also roast in an oven at 450 degrees for 35-45 minutes or until desired crispiness.
