Instructions
Preheat the oven to 375F. Lightly grease a 2-quart baking dish. In a medium bowl, mix the oats, half of the walnuts, baking powder, cinnamon, and salt. Stir to combine. In a separate bowl, combine the syrup, milk, egg, butter, and vanilla.
Spread half of the berries in the bottom of the baking dish. Sprinkle the dry oat mixture over the fruit in an even layer. Pour the liquid ingredients evenly over the oats. Sprinkle the remaining nuts and berries over the top.
Bake for 35-40 minutes, until the top is browned and the oats have set. Let cool 10 minutes before serving.
Notes
Add different berries: Raspberries, blackberries, strawberries or a combination of them.
Make Individual: Use a ramekin to make individual portions in their own dish.
Variation tip: Protein powder. More protein can be added to this Blueberry Baked Oats without Banana.
Alternate ingredient: Peanut butter, PB2 or an alternate nut butter can be added along with chocolate chips can replace the berries.
Top: Feel free to top with yogurt for more goodness.
Applesauce: Replace butter with applesauce in the batter for this baked oatmeal recipe.
Different Nuts: Pecans, almonds, cashews or other nuts. Toast the nuts for even more flavor.
