This Strawberry Pudding recipe is perfect to make during strawberry season. With 5 ingredients and just 15 minutes, you can prepare this wonderful homemade treat.
Place gelatin and water in a small bowl and whisk for 30 seconds to combine. Add sugar, if desired. Whisk in coconut milk.
Place strawberries in a blender and puree until smooth. Pour the blended strawberries into the gelatin mixture and stir to combine.
Transfer pudding mixture to a small pot and place over medium-low heat.
Whisk for 4-5 minutes until gelatin is melted and strawberries are cooked down.
Pour into individual serving dishes.
Refrigerate for 3 hours or overnight, until set.
